Protein and energy balls are the perfect snack to have for some pre-workout energy, post-workout recovery, between meals or just as a snack through the day for a little protein boost!
Making them couldn’t be easier plus, they’re convenient to take with you on-the-go.
Give our mango and pineapple energy bites a try!
What You’ll Need:
Dried figs or dates – 100g (plus water for soaking)
Dried pineapple – 35g
Dried mango – 35g
Cashew nuts – 35g
Almonds – 35g
Soak the dried figs or dates in water overnight.
Place the desiccated coconut, chia seeds and flax seeds into separate ramekins or bowls for coating.
Making the bites:
Drain and roughly chop figs, dried pineapple and mango and place in a blender or food processor along with the nuts. Blend until everything is well chopped and forms a thick doughy consistency.
This could take up to 5 minutes depending on equipment used.
Remove the dough and form into one large ball. Cut this in half, roll into long sausage shape and take sections to form into smaller balls (roughly 8g each).
Repeat with other half or store in the fridge and use later.
Tip 1: Keep your bites in the fridge to maintain freshness and texture.
Tip 2: For an extra kick, blend in some unflavoured vegan protein powder for an added protein boost!
